Ingredients:

  • 2 medium-sized fried onions
  • Half a cup of pudina (mint) leaves
  • Half cup of dhania (coriander) leaves
  • 1 cup of hung curd
  • 600 grams of chicken, biryani cut
  • 2 tablespoons of Seasonal Souvenirs Biryani masala
  • 1 tablespoon of red chilli powder
  • Salt to taste
  • 2 tablespoons of ghee
  • 1 tablespoon of ginger-garlic paste
  • 4 serving spoons of refined oil
  • 500 grams of basmati rice

For the whole spices:

  • 1-inch cinnamon stick
  • 4-6 cloves
  • 4 green cardamoms
  • Half teaspoon of black jeera (cumin)
  • 2-star anise

Instructions:

  1. Start by taking the biryani cut chicken in a bowl. Add the hung curd, half the dhania, half the pudina, and half of the fried onions. Add salt, red chili powder, ginger-garlic paste, ghee, oil, and Seasonal Souvenirs Biryani masala to the bowl. Mix all ingredients well, cover, and refrigerate for at least 4 hours for proper marination.
  2. Soak the rice for at least an hour.
  3. After 4 hours, rinse the rice. Take the rice in a thick bottom vessel and add 1.5 litres of drinking water, whole spices, salt, and oil. Cook rice up to about 70%. Drain all the excess water from the rice vessel, making sure the spices stay with the rice.
  4. Add all the marinated chicken in a big vessel with a thick bottom. Sprinkle the remaining dhania and pudina on top of the chicken.
  5. Layer all the half-cooked rice over the chicken and top it off with the remaining fried onions by sprinkling it all over it.
  6. Cover the vessel with a perfect-fit lid and place some weight over the lid (2-3kg required). Cook on a large flame for 15 minutes, then transfer the vessel to the top of a tawa, place it on a small flame, and let it cook for 25 minutes.
  7. Garnish with dhania and serve it.

And voila! Your homemade Chicken Biryani is ready to be served and savored. Enjoy this delightful dish with your loved ones!
